What you need

2 tsp vanilla extract

½ cup butter

10 cup popped popcorn

0 Make popcorn and set aside (air popped popcorn works best). 1 Melt butter in saucepan over medium heat. Once melted, add allulose and stir until evenly mixed. 2 Stir continuously – bring mixture to a boil over medium heat. 3 Once boiling, reduce heat to a simmer and allow to simmer without stirring for 5 minutes. 4 At 4 minutes, add in vanilla and stir to mix. 5 Allow mixture to continue to boil. At 5 minutes, remove from heat, at baking soda and stir until evenly mixed. 6 Allow mixture to continue to boil. At 5 minutes, remove from heat, add baking soda and stir until evenly mixed. 7 Drizzle caramel over popcorn and stir to coat evenly (I added popcorn into a large glass bowl to mix). After mixing, pour onto a parchment paper lined baking sheet to allow it to cool (to prevent it from sticking to the bowl). 8 Once cooled, serve and enjoy.View original recipe
