In a small bowl, combine ½ cup PlumGood Juice with 2 tablespoons of chia seeds. Stir well, then refrigerate for about one hour, or until the mixture thickens into a gel-like consistency.
In a separate bowl, blend the cottage cheese with 2 tablespoons of PlumGood Juice until smooth. Spoon this mixture into the bottom of a parfait dish.
Add a layer of the PlumGood–chia mixture on top, followed by a layer of fresh sliced fruit.
Blend the plain Greek yogurt with the remaining PlumGood Juice and spoon it over the fruit.
Sprinkle the chopped nuts on top of the parfait and serve chilled. Enjoy!
